For our class on freshly-milled flour, I made a no-knead 100% whole grain loaf that is adapted from Artisan Bread in Five Minutes a Day. As promised, here is the ingredient list:
824 grams lukewarm water, about 100ºF
2¼ teaspoons instant yeast
1 tablespoon kosher salt
825 grams freshly-milled wheat flour (half spelt, half hard white)*
* Or you can use the following instead for improved dough structure:
35 grams vital wheat gluten
795 grams freshly-milled wheat flour
